Jungle Spice “Roja” continues the tradition of using chilies grown and harvested in the Amazon Rainforest of Peru.
The jungle (Amazon Rainforest) represents 60% of the Peruvian territory (that’s huge). For this sauce our partners at Jungle Spice took a trip south in the Amazon, to Ucayali, very close to Cusco and Machu Picchu, to source the “Fish-Eye” chili, also known as “Ojito de Pescado” or “Red Charapita”.
This pepper is extremely rare and has a distinct fruity, citrus aroma, and it is equal in heat to cayenne pepper, making it medium level spicy. It lingers a little longer than the “original” and “smoked” sauces but the heat is not as sharp. Coming in at 50,000 Scoville heat units, it is considered medium level spicy – you be the judge!
