Vegan Quinoa Golden Berry Cookies

A great combination of healthy ingredients and great taste, these quinoa golden berry cookies make a perfect “guilt-free” treat.  Loaded with healthy ingredients but delicious at the same time.  Vegan and gluten free!

Yields: 12 -15 servings

Instructions
  1. Grind the dark chia seeds and add 6 tbsp of water, stir and let sit in the refrigerator for 10 minutes.
  2. On a separate bowl sift and mix all dry ingredients and set aside.
  3. Combine sugar and Earth Balance spread in the mixer and mix well until soft.
  4. Incorporate the chia seed mix and blend well.  Add vanilla extract, then slowly incorporate all the previously mixed dry ingredients.
  5. Add the quinoa flakes and continue to mix until well blended.
  6. Scoop batter on a baking pan, top with a couple of golden berries and bake at 350o F for 10 minutes or until golden.
