Grain-free Strawberry Crumble

Wet – Cooked on stove
3 cups strawberries
2 chopped apples
2 tbsp chia seeds
1 tsp cinnamon
Dry -Blended in food processor.
1/2 cup dates
1/2 cup almond flour
1/4 cup coconut flour
1/4 cup shredded coconut
1 tbsp mesquite powder
¼ cup coconut oil
2 tbsp maple syrup


1. Pre- heat your oven to 350*
2. Add to a small pot strawberries, apples and cinnamon. Cook on medium to low heat for about 10-15 minutes until the fruit is soft and mushy. When the fruit is ready and well mixed remove from heat and add in chia seeds. Set aside to cool and thicken.
3. While cooking the fruit down add dates, almond flour, coconut flour, shredded coconut and mesquite to a food processor and blend on high to combine ingredients. (1-2 minutes)
4. Add coconut oil and maple syrup to the dry mixture in the food processor and blend until well mixed.
5. Using an oven safe baking dish layer, the berry mixture first then evenly spread the crumble mixture on top.
6. Bake for 20mins. I like to broil the dish for 1 minute at the end to get a nice crispy top.
Store in an airtight container in the fridge for 4-6 days.
